Avocado Cucumber Bites

Preparation: 20 min

Slice the cucumber into 10 pieces. Top each piece off with the bits of salami that were set aside previously. Enjoy!

Stir the salt and dill into the mixture. Finely chop the salami. Set aside some of the salami as a garnish for later and mix the remainder into the avocado filling.

Prepare a whole cucumber by slicing it in half lengthwise. Wrap and set aside one half of the cucumber for another recipe. Lay down the remaining half on a clean surface, and use a knife or spoon to remove the seeds and core of the cucumber. Make sure the space created is hollow enough to hold the filling - there will be a lot!

Remove the avocado from its skin into a bowl. Use the back of a fork to mash the avocado, and combine the ricotta cheese with it.

Spoon the filling into the cored cucumber half. Pack in the filling to avoid a mess. Some filling may rise over the edge of the cucumber, but this is okay.
