Ingredients:

  • 450 g - flank steak, sliced thinly against the grain
  • 1/4 tsp - xanthan gum
  • 2 tbsp - low carb soy sauce
  • 2 tbsp - vegetable oil
  • 4 cloves - garlic, minced
  • 1 tbsp - grated fresh ginger
  • 4 cup - broccoli florets
  • - salt and pepper to taste

Beef and Broccoli Stir-Fry

In a medium bowl, mix together the xanthan gum and soy sauce. Add the sliced beef and toss to coat.

In a large skillet or wok, heat the vegetable oil over high heat.

Add the garlic and ginger and stir-fry for 30 seconds, or until fragrant. Add the broccoli and stir-fry for 2-3 minutes, or until crisp-tender.

Remove the broccoli from the skillet and set aside.

Add the beef to the skillet and stir-fry for 2-3 minutes, or until browned and cooked through. Return the broccoli to the skillet and toss everything together.

Season with salt and pepper to taste.
