Chocolate Mug Cake

Start by selecting a tall coffee mug. Break the chocolate into chunks and add to the mug along with the butter. Microwave for 30 seconds or until completely melted. Stir together to combine.

Add the sweetener, baking powder, almond flour, cocoa powder and a pinch of salt to the mug. Beat the dry ingredients into the wet ingredients. Crack the egg into the mug and add the vanilla extract. Beat together until well combined.

Transfer to the microwave and cook for 50-60 seconds. Be sure not to overcook the cake because it will become dry quickly. The cake will puff considerably, do not be alarmed!

Once your chocolate mug cake is cooked you can allow it to cool a little before serving. Why not try topping with whipped cream and a dusting of cocoa powder.
