Swedish Meatballs

Preparation: 30 min

Add the ground beef, egg, parsley, chopped onion and minced garlic together in a large mixing bowl. Season with a good pinch of salt and pepper.

Use your hands to mix the ingredients together thoroughly. Once mixed, divide the mixture and roll into 18 small meatballs.

Heat the olive oil in a large frying pan over a medium heat and add the meatballs. Fry until browned on all sides and cooked though – around 15 minutes. Reserve to one side.

While the meatballs are cooking, heat the butter and coconut oil in a large casserole dish over a high heat until it starts to brown. Reduce the heat to medium and add in the mustard, cream, stock and nutmeg and stir well. Season with salt and pepper and simmer for 15 minutes, stirring occasionally.

Add the meatballs into the gravy and heat through.

Serve the meatballs immediately and scatter with fresh dill.
